In truth, it is bistro cooking that he credits as his favorite, and prompted him to open his second restaurant, Bouchon, in Yountville, CA, just down the street from his now legendary French Laundry. In his latest book, Bouchon (Artisan), Thomas details the finer points of bistro classics such as Onion Soup and Apple Tarte Tatin.
